In a sauce pan, combine filtered water and chopped ginger. Bring to a boil and reduce heat. Simmer for 30 minutes.
Remove the pot from the heat and let cool for a couple minutes before pouring the liquid into a heat safe jar or pitcher (leave out the ginger).
Let the mixture cool for 10 minutes before adding the raw honey and rose petals. Cover and let brew for 10 minutes.
Add the lemon juice and stir well. Strain the rose out of the lemonade and place lemonade in the fridge to chill -- or serve immediately over ice.
Drink the lemonade with in 5 days!
