Ginger, grapefruit, herbs, gin and champagne all married together for the most delicious and festive cocktail.
In a small sauce pan, bring filtered water to simmer. Turn off heat and add the sugar and herbs. Let cool for 10 minutes.
In to champagne flutes, add 3 dashes of bitters, 2 slices of grapefruit, 1 sprig of rosemary, 1/2 oz of gin, 1/2 oz of herbal simple syrup.
Fill the flute half way with ginger beer, then add champagne to the top of the glass. Stir with sprig of rosemary and enjoy!
