Grapefruit Rosemary Champagne Cocktail

Ginger, grapefruit, herbs, gin and champagne all married together for the most delicious and festive cocktail.

  • brut champagne
  • angostura bitters
  • gin 1/2 oz per serving
  • ginger beer
  • grapefruit slices
  • rosemary sprigs
  • herbal simple syrup directions below

Herbal Simple Syrup

  • 1/2 cup filtered water
  • 3 tbsp sugar I used coconut sugar
  • 1 sprig rosemary
  • 3 leaves sage


To make the simple syrup

  1. In a small sauce pan, bring filtered water to simmer. Turn off heat and add the sugar and herbs. Let cool for 10 minutes.

To make the cocktail

  1. In to champagne flutes, add 3 dashes of bitters, 2 slices of grapefruit, 1 sprig of rosemary, 1/2 oz of gin, 1/2 oz of herbal simple syrup.

  2. Fill the flute half way with ginger beer, then add champagne to the top of the glass. Stir with sprig of rosemary and enjoy!
