Peach and Tomato Chickpea Salad

Featuring two of the produce stars of summer, this salad is perfect as a light meal or as an appetizer with chips.

Ingredients

  • 2 large tomatoes diced
  • 2 peaches diced
  • 2 cups chickpeas 1 can or fresh
  • 1 avocado diced
  • 1/4 cup red onion chopped
  • 1 small jalapeno chopped
  • 1/4 cup cilantro chopped (plus more for garnish)
  • 1/4 cup lime juice more if desired
  • 2 tbsp avocado oil
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 2 tbsp hempseed optional

Instructions

  1. Combine all Ingredients in a large bowl and mix well.

  2. Serve over greens, in tacos, or as an appetizer with chips.
