Strawberry season’s in full swing here in the northeast and I’m so here for it! The fresh quarts of bright red berries have been truly irresistible over the last week. Which, needless to say, means recipe testing was essential. Remember when I said I’d be drinking ginger rose lemonade all summer? Forget that. This honey basil strawberry lemonade is everything summertime dreams are made of! You’ll definitely want to make a batch of this ASAP.
This strawberry lemonade is incredibly simple to make. Honey, basil, strawberries, lemons and water are the only ingredients, and you’ll start by dissolving raw honey into hot water and adding fresh basil; making a honey basil simple syrup. Then you can use a food processor, or blender, to puree the fresh strawberries with lemon juice, lemon zest and fresh basil. After combining the syrup and the strawberry puree in a pitcher, top off with cold water and ice cubes.
Since fresh fruit is involved it’s best to drink the lemonade fresh, but it can last in the fridge for an extra day or two. We used the last bit for mixing into mules about 48 hours after making it and it tasted fine, but I don’t think it would ave lasted any longer. This strawberry lemonade would make an awesome summer cocktail mixer. Try serving it with gin or vodka over ice! Or you can serve it as a frozen lemonade by freezing the berries or blending it with ice!

Strawberries continue to rank high on the EWG’s dirty dozen list. Meaning: conventional berries tend to be heavily sprayed with pesticides. When possible, choose strawberries grown organically or from a local farm who avoids the use of harmful pesticides. It’s also important to wash your berries before consuming them. I like to just add them to a bowl of cold water and lightly hand wash them before straining and rinsing.
Honey Basil Strawberry Lemonade
honey sweetened and perfectly tart lemonade made with a honey basil simple syrup, fresh berries and lemons.
- 3 lemons juiced
- ~1 cup fresh basil
- 2 cups fresh strawberries stems removed
- ~4 cups water
- 2 tbsp raw honey organic and unfiltered, if possible
Boil 1 cup of water. Remove from heat and stir in the raw honey until dissolved. Add 1/4 cup of the basil leaves and cover. Set aside.
In a food processor or blender, combine the strawberries, lemon juice and the rest of the basil and puree until smooth.
Strain the honey basil syrup into a pitcher and add the strawberry puree. Top off with cold filtered water and stir well. Taste and add more water, lemon or honey to taste.
Serve over ice within 48 hours. Best consumed day of!
