Nearly every time I eat a sandwich I declare it my new favorite sandwich, and this ciabatta sandwich is no different. Vegetables are often an after-thought when it comes to sandwiches, acting as toppings for a meat or protein base. Bored by lunchtime salads, I’ve felt inspired to create a variety of go-to veggie sandwiches of simple ingredients with complex flavors. Let’s deconstruct how to make my new favorite lunch: the crunchy veggie ciabatta sandwich with chipotle mayo and herbed goat cheese!

Ciabatta Sandwiches are The Best Sandwiches

The booth with baskets of freshly baked breads is definitely the best part of this year’s farmers market. Each week I go home with our regular sourdough loaf and a couple of sunflower raisin ciabatta rolls. I recommend sunflower raisin if you can get your hands on it, but you can 100 percent make this sandwich with regular ciabatta bread instead. Similarly, you can make this sandwich with any regular or cinnamon raisin sliced bread! But there is something just so luxurious about a sandwich book-ended with ciabatta.

You might find a store-bought version of chipotle mayo, but totally encourage you to make it yourself. Simply take a tbsp of mayo and mix in healthy sprinkles of cayenne, ancho chili powder, smoked paprika and chipotle chili powder. Serious game changer. Don’t be surprised if it’s the only condiment you ever want to use.

The rest of the ingredients are fairly simple, but nonetheless important. Sliced radish, cucumber, cilantro and your favorite variety of greens makes up the internal substance of the ciabatta sandwich. You’ll crown the fresh veggies with your favorite variety of pickles. I’ve enjoyed this sandwich with regular homemade dill pickles, pickled mixed veggies and pickled jalapeños. The acidity matters more than the pickled item itself. I also sprinkled in some hempseed for an added boost, but it’s totally optional.

Assemble the Sandwich:

Do as I say and not as you see pictured. If you’ve ever made a veggie sandwich, you understand that it’s an art to get everything stacked. For ease, I recommend the following order: bread, mayo, goat cheese, cucumber, radish, hemp seeds, cilantro, greens, pickles, mayo, bread. Why? Because trying to balance radishes and cucumbers on top of a mountain of greens is no simple fete. Trust me on this one. Ready to give this a go yourself? Let’s do it!

Veggie Ciabatta Sandwich With Chipotle Mayo + Herbed Goat Cheese

move over lunchtime salads, this veggie forward sandwich is the new favorite.

Ingredients

  • 1 ciabatta roll, sliced into top and bottom pieces
  • cucumber, sliced
  • radish, sliced
  • mixed greens or other lettuce/greens
  • herbed chevre (goat cheese) can use vegan cheese if preferred
  • dill pickles, sliced or any pickled veggies
  • organic mayo can sub vegan if necessary
  • chipotle powder
  • cayenne powder
  • ancho chili powder
  • smoked paprika
  • fresh cilantro, chopped optional
  • hempseeds optional

Instructions

  1. Mix your chipotle mayo by combining 1-2 tbsp mayo with chili powders, cayenne and paprika. Stir well.

  2. Toast your ciabatta bread, then spread layer of mayo on both slices.

  3. Sprinkle herbed chevre onto bottom slice of bread, then arrange sliced cucumber and radish over top of the goat cheese.

  4. Add a large handful of mixed greens and cilantro and top with the pickles. Cap off the sandwich with the other slice of bread and enjoy!
