Since starting the easy weeknight meals series back up I’ve become seriously motivated to get dinner on the table as fast as possible. The last two nights we’ve had delicious dinners prepared in under 25 minutes! One of my favorite meals of the week was this BLT inspired Spinach Salad with bacon and homemade sourdough croutons.
In the warmer months our appetites definitely change in favor of lighter meals and salads. When I finished preparing his salad, I was skeptical of its ability to fill us up. I ended up pleasantly surprised! The ingredients of this salad help make it substantial enough for dinner without feeling too heavy. That being said, if you want a more substantial meal, I recommend serving roasted potatoes, a shared cheese board or a side of garlic bread with the salad!
Sourdough croutons, you say?
YES, you heard that right. Trust me when I say: You’ll never want to buy croutons again when you realize how simple it is to make them at home. You simply chop up your favorite bread, drizzle or mist the pieces with oil and sprinkle with seasoning before a short bake/toast in the oven. You can even make them with gluten-free bread if necessary! Take my word for it: sourdough makes amazing croutons.
Is there anything better than a salad with bacon on it?
I’d argue not. But as with many things, quality matters. I recommend using a sustainably produced, uncured bacon if possible. We’re fortunate to have access to local organic uncured bacon in our area. But I’ve also been pleasantly surprised to the options available in our grocery stores. Applegate Farms is a favorite store-bought brand of ours. Butcherbox (an online organic meat retailer) also has great bacon!
I made a shortcut in this recipe by using a store-bought bottle of Tessemae’s ranch dressing for the salad. I love making homemade dressings, but I have yet to give ranch a try. If you prefer to make your own, or simply hate creamy dressings, I can confidently say this salad would taste amazing with a simple lemon vinaigrette instead. Ready for the recipe? I thought so. BLT Inspired Spinach Salad With Bacon + Croutons
This light summer salad with bacon is a great way to get a delicious meal on the table quick!
- 16 Oz Spinach (per 4 people) or any other lettuce
- 1 tomato
- 1 avocado
- 1/2 lb uncured bacon
- organic ranch dressing I used Tessemaes
- red onion slices
- fresh cilantro, chopped optional
- 4 slices sourdough bread, cubed
- olive oil
- black pepper
- sea salt
- garlic powder
Preheat the oven to 400 degrees. Cube your sourdough slices and place into a mixing bowl. Little mist or drizzle the bread with the oil and then arrange flat onto a baking sheet. Sprinkle them with garlic powder, black pepper and sea salt. Bake in the oven for 10 minutes or until the edges are golden.
In a skillet, cook your bacon until fat is fully rendered and it is crisped to preference.
While the bacon cooks, chop your veggies then combine your spinach or lettuce with the ranch dressing (to preference) in a large bowl and toss well. Separate the Spinach among the bowls and add sliced tomato, cilantro, onions, avocado and croutons.
Once bacon is cooked, carefully chop it or tear it and place on top of the salad. Finish off the salad with sea sallt and black pepper and any other desried toppings. (I like adding crushed red pepper and hemp seeds).
