I thought I was done posting for 2018, but then I made an impromptu champagne cocktail for tonight and decided I wanted to get this short recipe up immediately — in the event you folks might still be searching for a festive NYE beverage. This drink might be bit extra in terms of ingredients, but truthfully I had everything already on hand with the exception of the champagne. You could certainly skip out on a few of the ingredients, such as sage and bitters, but you’ll definitely want to make sure you have the rest!
As I said before, this will be a super short post. As much as I’d love to go in to details on the ingredients with you, I have drinks to sip, games to play and an adorable husband to kiss at midnight — just as you might, too. So let’s get on with the delicious details, yeah?
Grapefruit Rosemary Champagne Cocktail
Ginger, grapefruit, herbs, gin and champagne all married together for the most delicious and festive cocktail.
- brut champagne
- angostura bitters
- gin 1/2 oz per serving
- ginger beer
- grapefruit slices
- rosemary sprigs
- herbal simple syrup directions below
Herbal Simple Syrup
- 1/2 cup filtered water
- 3 tbsp sugar I used coconut sugar
- 1 sprig rosemary
- 3 leaves sage
To make the simple syrup
In a small sauce pan, bring filtered water to simmer. Turn off heat and add the sugar and herbs. Let cool for 10 minutes.
To make the cocktail
In to champagne flutes, add 3 dashes of bitters, 2 slices of grapefruit, 1 sprig of rosemary, 1/2 oz of gin, 1/2 oz of herbal simple syrup.
Fill the flute half way with ginger beer, then add champagne to the top of the glass. Stir with sprig of rosemary and enjoy!
