Citrus Pico De Gallo Black Bean Salad
A simple and no-cooking required recipe perfect for a light summer main course or to be served as a side to meat and veggies.
- 1 can rinsed organic black beans
- 1 tomato diced
- 1 avocado diced
- 1 lime juiced
- 1/4 cup onion (white, green or red) diced
- 1/4 cup cilantro diced
- 1/2 jalapeno finely diced
- 1 tbsp avocado or olive oil
- 1/2 tsp minced garlic
- sea salt and black pepper to taste
In a large bowl combine all ingredients and mix well to evenly coat.
Serve immediately or store in the fridge for up to 5 days.
