The farmers’ market was busting at the seams with awesome finds today. I love browsing the little white tents for produce, flowers and other craft goods. Today I snagged a gorgeous bouquet of peonies that are now bringing so much joy to my kitchen counter. Strawberries and micro greens were among the other things I purchased, both of which made it into today’s recipe: a Strawberry, Walnut and Goat Cheese Spinach Salad.
Just 10 minutes and less than 10 ingredients is all you need to craft this salad together! Spinach, strawberries, walnuts and goat cheese are the main flavors in this salad, each bringing their own something. I lightly dressed the greens with olive oil and balsamic vinegar before topping them with the rest of the ingredients since it was just a single serve salad. If you’re making this to serve as a side dish, I recommend tossing all the ingredients int a bowl together to evenly coat and distribute.
I’m not sure when I decided I suddenly liked goat cheese, but lately I can’t get enough of it. I used herbed goat cheese for added flavor, but plain goat cheese would work just as well. Goat cheese and strawberry is quite the match made in heaven! If you aren’t a fan of walnuts, slivered almonds would pair nicely in their place. I added the hemp seeds for added protein and fat, but they could easily be omitted without affecting the flavor of the salad. Lastly, if you don’t have micro greens, you can simply make the salad with just the spinach — arugula would be another excellent choice.

Strawberry, Walnut and Goat Cheese Spinach Salad
A sweet, tangy and crunchy salad that's perfect for all of your summer meals.
The ingredients amounts here are for a single serve salad, adjustments can be made if serving multiple people or eating it as a side.
- 1 cup fresh baby spinach
- 1/2 cup micro greens daikon radish or pea shoots
- 5 strawberries sliced
- 1-2 tbsp crumbled goat cheese
- 1/4 cup walnuts
- 2 tbsp hemp seeds
- 1/2 tbsp balsamic vinegar
- 1 tbsp extra virgin olive oil or avocado oil
- sea salt to taste
- black pepper to taste
In a mixing bowl, combine all the ingredients and toss to evenly coat the greens. Plate and serve immediately.
If preparing ahead of time, combine al ingredients except the oil and vinegar. Add the oil and vinegar just before serving.
