Today I bring you one of the most simple “life hack” style recipes and a short cut I use quite often: my two ingredient coleslaw. Personally, I find normal coleslaw to be pretty meh. The texture is okay and all, but the dressing certainly can leave something to be desired. I do love the idea of coleslaw though: a creamy + crunchy little salad that can be eaten on its own or a top virtually anything.

I stumbled upon making this recipe by accident one day when the fridge was running low and I needed an extra side for dinner. We had 1/2 a bag of broccoli slaw leftover so I tossed into a bowl and threw some Tessemae’s ranch dressing on top and voilá! It was better than any other coleslaw I had ever tried. Since then, we have used it as a topping for burgers, tacos, and bbq sandwiches.

Broccoli slaw is such a versatile shortcut. I don’t buy many bagged vegetables, but when I know a week is going to be busy I think of a few meals the involve broccoli slaw. This past week I used half the bag for making this recipe for tacos, and the other half of the bag for stir fry.

If you follow my instagram, you’ve probably noticed my love for Tessemae’s organic dressings. They are the GOAT. Simple wholesome ingredients, no preservatives or added sugar, paleo, gluten free, whole 30, and some are even vegan. They’re becoming more and more available — I find mine in a Walmart in upstate New York, which means its probably in a grocery store where anyone else lives too.

You could sub any high quality, natural or organic ranch dressing in its place but I can’t say it will taste EXACTLY the same. It will be fine however, has anything with ranch dressing ever tasted bad? The recipe below includes a full bag of broccoli slaw, so you can easily half it for a two person meal, or double it to take along to a potluck or picnic.

Ingredients:

  • 3 or 4 tbsps Tessemae’s Ranch Dressing (or another natural/organic ranch dressing)
  • 1 bag broccoli slaw
  • sea salt + pepper to taste

Directions:

  1. In a large bowl, mix the slaw and dressing until evenly coated.
  2. Serve as a side or as a topping for tacos, BBQ or sandwiches
